| 1 catty of short pork ribs | 10 slices of ginger | | 2 stalks of spring onions | 2 tsp of dark soy sauce |

| 4 tbsp dark soy sauce | 1 tbsp of light soy sauce | | 1/2 cups of shaoxing wine | 1/2 tsp of salt | | pinch of black pepper | |

Cooking Method

| 1. | Blanch short pork ribs in boiling water for 20 minutes, remove and wipe excess water. | 2. | Marinade short pork ribs in 2 tsp dark soy sauce for awhile, stir-fry ribs in oil. Remove. | | 3. | Saute ginger and onions in some oil, add in ribs, stir-fry and add in seasonings. Cook with cover until sauce almost dries up. Serve. |
